Homemade Cherry Popsicles
Easy and fresh summer recipe
I wonder why I’ve never made these before – delicious homemade cherry popsicles! This year I patiently waited for the cherries to get beautifully dark. There is an old cherry tree in my parent’s garden which is decades and decades old. The weather has been cool and rainy which really reduces the amount of cherry fruit flies. As a result the cherries are juicy and ripe and ready to be picked for amazing recipes. One of them is the homemade cherry popsicle recipe!
It’s really easy and made from a couple of simple ingredients. Cherries – obviously, and then a bit of sugar and lemon juice. That’s it – great for vegans too! If you want to add a little non-vegan a twist to your cherry popsicles, divide the blended mixture into two parts and add full fat greek yoghurt or a soured cream to one of the parts. It will add a taste of frozen yoghurt to the pops!

Beautifully red homemade cherry popsicles are great for 4th of July too! I am a fan of natural colourings so the cherries are a great option if you’d like to add some pops of red to your summer table. Celebrate the Independence Day with healthy recipes! If you enjoy fruits – watermelon, strawberries, blueberries, raspberries or blackberries are also great options. For light savoury summer dishes you can use black olives, tomatoes, red peppers or even red grapes!

Homemade Cherry Popsicles
Preparation: 15 minutes + 3 hrs freezing
Serves: 4
You’ll need:
- 500g ( approx. 2-3 cups) or cherries
- 2 tbl spoons of sugar (or honey)
- juice from 1 lemon (or 2 limes)
- soured cream or full-fat greek yoghurt
- pop making mold
- basic blender

Instructions
Pick (or buy) the darkest most ripe cherries you can find. Wash the cherries thoroughly and remove pits from each making sure that they don’t have any rotten patches. Put the pitted cherries into a bowl, add sugar or honey and the lemon/lime zest. Then use blender (very good quality Russel Hobbs hand blender or great high-speed countertop blender) to blend the mixture until smooth. If you prefer the cherry popsicles to be really smooth, press the mixture through a sieve using table spoon. I chose to skip this step because there is quite a bit of fibre in the cherry peel and I don’t mind a bit of texture.
Lastly, fill the popsicle mold with the smooth blended cherry mixture. You can use mold that comes with plastic sticks. However, this has a disadvantage if the plastic stick gets lost. If you don’t want to worry about keeping the set together, wooden stick popsicle mould is a wonderful choice! Place the mould into the freezer and freeze for at least 3 hrs. Eat immediately once you take the popsicles out. Yum!
Little twist to the recipe: Make the homemade cherry popsicles in two colours, divide the blended mixture into two parts and mix a couple of spoons of full-fat greek yoghurt or a soured cream into one part. Spoon one part into the homemade popsicle mold until it’s about half way up, then add a few spoon of the yoghurt mixture.
